All of our listed Cafes, Restaurants, Farmers Markets, Bars and Pubs actively implement environmental policies that include good practice to minimise food waste and very importantly source local, seasonal and sustainable ingredients. Some go a step further and work with local groups and schools to encourage healthy eating and teach cooking skills.

In Ireland this is known as the "Just Ask" practice promoted by Bord Bia (Irish Food Board) to encourage customers to find out the provenance of the foods they eat and to encourage restaurants, etc, to use Irish provenance food and beverages.

  • Entered the Green Hospitality Award in 2007- aiming for Silver initially, audit was so successful we actually achieved GOLD- 1 of 2 hotels in Dublin to win Gold, 11 hotels in Whole of Ireland
  • Introduced a brand new waste management programme in 2008 – removing compactor from waste yard and replacing it with recycling programme. Full staff training implemented and guest encouragement
  • Reduced outdoor lighting by 60% from 2008- replaced public lighting with LED and bedrooms have now class A efficiency- motion sensors in public toilets
  • Reduced water consumption by 11% in 2009 so far by ongoing replacement of shower heads and flush timers- this is still in operation
  • All rooms are currently been updated with new water efficient shower heads, taps aerators and toilet tummies.
  • Enthusiastic RB co-ordinators, Bronagh Mc Laughlin and Caroline Gibson, alongside great assistance from Chief Engineer Kevin Wall and great support from GM and green team.
  • Assisted local primary school achieve their An Taisce Green flag award in water management
