Food & Drink

Breakfast, Sunday Brunch, Family Lunch, Afternoon Tea, Sunday Dinner, Late Supper and Snacks in between – On the Rocks, Freshly Squeezed, Pulled, Poured, Shaken but not Stirred.  Some of the highlights of your trip will be the food and drink enjoyed - all the more so because it is sourced and produced in a responsible way.

All of our listed Cafes, Restaurants, Farmers Markets, Bars and Pubs actively implement environmental policies that include good practice to minimise food waste and very importantly source local, seasonal and sustainable ingredients. Some go a step further and work with local groups and schools to encourage healthy eating and teach cooking skills.

Choosing green tastes so good! Wherever you go ask whoever is serving you food - where does it come from? In Ireland this is known as the "Just Ask" practice promoted by Bord Bia (Irish Food Board) to encourage customers to find out the provenance of the foods they eat and to encourage restaurants, etc, to use Irish provenance food and beverages.

Signature ingredients include Irish smoked fish, house breads, west coast fish and shellfish, free range chicken and Irish Aberdeen Angus dry aged on the bone. After that, the skills of the chef come into play. His sauces, rubs, and marinades transform the raw basics into heavenly concoctions. Organic and small farms are given priority in sourcing. Seasonal vegetables come mainly from an organic farm in the hills of Co. Wicklow.

Desserts are all made in house and to die for. You'd expect a few temptations so make sure you leave room. Enjoy it all in a graceful dining room setting with elegant table arrangements and relaxing muted colours. A well chosen wine list gives enough scope for something to match all the dishes and suit any taste.. Afterwards, the hotel bar is a lovely place to kick back with a coffee and brandy or other after dinner liqueur. Brooks Hotel is a find among finds for those who want to be in the heart of things, in a hotel which plays to its strengths. Small is definitely beautiful here and the warm and friendly personal service of the professional staff in the restaurant certainly proves that
